Asian Turkey Quinoa Meatballs

The thing about meatballs? They’re pretty well-rounded, and not just their shape. I mean they’re really versatile. You can make them with pork, turkey, chicken, beef, and apparently – quinoa. Wow, the quinoa you guys. So good! They add an extra bit of wonderfulness to these healthy meatballs.

Have you tried quinoa? It’s like…. well it’s like quinoa I guess. It’s just yummy, protein packed, sorta-like-rice-but-not-really and I’m in love with it.

I love how quickly these Asian Turkey & Quinoa Meatballs come together. You just throw a bunch of stuff in a bowl, give it a mix, roll it into balls, and pop em in the oven. Then, since you have to wait at least 10 minutes while they bake to yummy perfection, just whisk up some amazingly delicious Asian saucy-stuff to dip, slather, or drizzle on those meatballs. Ahhhhh so good. And easy! Win win win win win.

Ingredients

  • 1 pound ground turkey (I used very lean)
  • 1 cup cooked quinoa
  • 1 cup panko bread crumbs
  • 1 teaspoon sesame oil
  • 1 egg
  • 1 1/2 teaspoons minced garlic
  • 1/3 cup thinly sliced green onions
  • 1/8 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon chili powder

Sauce

  • 1/2 teaspoon hoisin sauce (found in the Asian section at the grocery store)
  • 4 tablespoons rice vinegar
  • 1/4 teaspoon sesame oil
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon chili powder
  • 1 1/2 tablespoons soy sauce
  • 1 teaspoon minced garlic

Instructions

  1. Preheat oven to 400. Line a baking sheet with foil and spray with cooking spray.

  2. In a large bowl combine turkey, quinoa, and next 8 ingredients. Mix to combine all ingredients. Use your hands to roll mixture into balls and place each meatball onto prepared baking sheet an inch apart. Bake 10-12 minutes until meatballs begin to brown.

  3. In a small sauce pan whisk together all sauce ingredients. Bring mixture to a boil, then reduce to a simmer. Serve cooked meatballs with sauce for drizzling or dipping. Garnish with green onions and sesame seeds if desired.
