Remember how I shared a Blueberry Avocado Quinoa Salad with you yesterday and we officially declared it Spring? Good. Just making sure because we all need to be on the same seasonal page here today. Otherwise you won’t truly be able to enjoy this cool and creamy, sweet and tangy Limeade Fruit Dip to it’s fullest potential. If you’re thinking cold wintery thoughts, you’ll just miss out on that sunbathing, pina colada sipping, cropped blue jeans and flip flops attitude that this dip is really meant to elicit.

If you do happen to find yourself in the depths of a frozen wintery season, I suggest that you ignore it completely. Go ahead and boycott that snow. How? Well I’ve got the recipe for you right here. First, whip up this seriously easy 3 ingredient (no joke!) Limeade Fruit Dip. Next, put on something that screams I refuse to believe it’s not sunny outside! and sit right next to your space heater (if you don’t own one, take a side trip to Home Depot right this minute and spend twenty dollars on your wisest investment of all time). Lastly, just turn on some summery jams and dive right in to this dip. Paradise right? Kiss winter goodbye people, we are on to springier and more fruit-dippy things.

Post Script: Ummmmm, did I mention that St. Patrick’s Day is my favorite holiday ever? Because everything is green! And I seriously am Irish. But you don’t have to kiss me.

Ingredients

  • 8 ounces cool whip, thawed
  • 4 ounces cream cheese
  • 1 cup limeade frozen fruit juice concentrate

Instructions

  1. In a large bowl combine cool whip, cream cheese, and frozen juice. (You may want to allow the juice to sit out at room temperature for a few minutes or run the can under warm water for a few seconds so it will soften slightly. Cream ingredients together with a hand mixer. 

  2. Cover and chill at least 30 minutes or until ready to use. Serve with all of your favorite fruits! (I love strawberries, apples, and bananas with this dip!)
