From now on, I’m only decorated pre-assembled gingerbread houses. The whole house-building process is a little much for me I’ve decided. Partly because I can’t seem to figure out the proper consistency for good house-holding frosting, and partly because I haven’t got the patience to wait while it all dries before I start decorating and then the whole thing crashes to the ground and I’m left with a heap of broken walls to embellish.

It’s all a little embarrassing really when I think about it. I mean, my father was a general contractor. This house-building thing should be in my blood, right? Seems to me that I should have a natural ability to do this type of thing but even a house smaller than a cat won’t stay upright if left to me. So like I said, from here on out, I’m only decorating the pre-assembled ones. Or at the very least, the ones that come with that plastic tray with the grooves so it doesn’t fall over while you’re frost-gluing everything in place.

I have to say however, that my frosting icicle sculpting abilities are unparalleled. Absolutely uncanny.

Now Oreo Stuffed Chocolate Mint Brownies, that is something I can put together. For some reason I have patience for these beauties but not gingerbread houses. Well…. I sort of have patience. I have to make sure there are a few extra oreos lying around, otherwise my impatience will leave me with a half pan of stuffed brownies, and a half pan of oreo-less brownies. Mint and chocolate go so well together, but never so wonderfully as when you add oreos to the mix! These brownies are rich and dense, stuffed with oreos, and topped with mint chocolate. You’ll be whipping up a second batch soon after the first has been inhaled!

Oreo Stuffed Mint Chocolate Brownies

  • 1 cup butter
  • 2/3 cup cocoa powder
  • 1 teaspoon vanilla
  • 4 eggs
  • 1 1/2 cups sugar
  • 1/2 cup brown sugar
  • 2 cups flour
  • 12 oreos
  • 1 cup mint chips
  • optional: additional granulated sugar for sprinkling


  • Preheat oven to 375. Line an 8x8 inch pan with foil and spray with cooking spray, set aside.
  • In a medium sauce pan, melt butter of medium heat. Stir in cocoa powder and vanilla. Pour mixture into a large mixing bowl. Add eggs, sugars, and flour and mix until all ingredients are incorporated and well combined. Pour half of batter into prepared pan. Lay a single layer of oreos side by side on top of batter. Pour remaining batter over oreos and spread evenly. Bake 30-40 minutes until a toothpick comes out mostly clean.
  • Melt chocolate chips, then spread over brownies. Sprinkle with optional sugar if desired. Allow to cool completely before cutting into squares.

Hey ,hands down this recipe looks absolutely amazing.ermm quick question though if u don’t have mint chocolate chips available cuz some food stores are sad and useless (shame on them)do you have a alternative like after eights or anything else thank you

    Hi Aria! These brownies are to die for! If you can’t get your hands on some mint chocolate chips, I would try white chocolate chips with a little bit of peppermint extract (just a couple of drops, it’s strong!) and a few drops of food coloring if your heart is set on having it green! The other option you have is to make a mint frosting! Google will turn up all sorts of amazing results for a good peppermint frosting. I hope this helps! 🙂

I wanted to make these for quick dessert to bring to my friends house. I dont have cocoa powder but I do have brownie mux. How would I be able to adjust the recipe?

    Hi Annmarie! I would suggest using the box brownie mix and preparing it according to the instructions on the box. When you have prepared the batter, pour half of it into your pan, top with oreos, then pour the remaining batter over the top of the oreos. Bake according to the box’s instructions. When they have cooled you can melt mint chocolate to pour on top as my recipe suggests. Hope this helps! 🙂

Where do you buy mint chocolate chips?

    I’ve found mint chocolate chips at Smith’s Marketplace, Dick’s and Walmart. But! If you can’t find any, you can also use white chocolate chips. Add a few drops of peppermint extract and green food coloring (if you want them to be green). And that will do just fine. Or… You can also use Wilton baking chips in mint. You can find them at crafting stores or in the cake decorating sections of some stores. 🙂

I made these and they were great! However, Id prefer them to be more moist, what can I add so the batter isn’t so thick?

    Hi Tricia! I would recommend baking them in a 9×13 inch pan for less time! 🙂
