Oreo Stuffed Mint Chocolate Brownies – Fudgey chocolate brownies, stuffed with oreos and topped with mint chocolate frosting!

Oreo Stuffed Mint Chocolate Brownies

From now on, I’m only decorated pre-assembled gingerbread houses. The whole house-building process is a little much for me I’ve decided. Partly because I can’t seem to figure out the proper consistency for good house-holding frosting, and partly because I haven’t got the patience to wait while it all dries before I start decorating and then the whole thing crashes to the ground and I’m left with a heap of broken walls to embellish.

It’s all a little embarrassing really when I think about it. I mean, my father was a general contractor. This house-building thing should be in my blood, right? Seems to me that I should have a natural ability to do this type of thing but even a house smaller than a cat won’t stay upright if left to me. So like I said, from here on out, I’m only decorating the pre-assembled ones. Or at the very least, the ones that come with that plastic tray with the grooves so it doesn’t fall over while you’re frost-gluing everything in place.

I have to say however, that my frosting icicle sculpting abilities are unparalleled. Absolutely uncanny.

Now Oreo Stuffed Chocolate Mint Brownies, that is something I can put together. For some reason I have patience for these beauties but not gingerbread houses. Well…. I sort of have patience. I have to make sure there are a few extra oreos lying around, otherwise my impatience will leave me with a half pan of stuffed brownies, and a half pan of oreo-less brownies. Mint and chocolate go so well together, but never so wonderfully as when you add oreos to the mix! These brownies are rich and dense, stuffed with oreos, and topped with mint chocolate. You’ll be whipping up a second batch soon after the first has been inhaled!

What people are saying about these Oreo Stuffed Mint Chocolate Brownies

“Made this tonight and yummy! Was a big hit at my house! I could not find mint chips so I used Andes chopped mints and I just sprinkled them on top just out of the oven and let them melt then let them cool.” – Annie

Wow….these look incredible! Brownies, Oreos (I would have to do double stuff of course), and mint, it doesn’t get much better than that. I just had to feature your recipe in my blog post today for “20 Amazing Desserts for St. Patrick’s Day” Here is the link, I hope you can visit and see your fun recipe!

Are the Oreos crunchy in this, or do they soften?

    They soften.

These were good but if we make them again we’d make ADJUSTMENTS: 1) Definitely need a larger pan (9×9?) as they filled the 8×8 pan to the top so the brownies were way too thick 2) the “frosting” in the recipe is Not as PICTURED. it’s more like a topping. The melted chips hardened when cooled and cracked when the brownies were sliced. we’ll try adding milk and butter or find a recipe for a creamy peppermint frosting.
