Easy, incredibly tasty slow cooker loaded tater tot breakfast casserole is the perfect make ahead crockpot breakfast for any occasion with sausage, tater tots, bacon, and loads of melty cheddar cheese!
4-5slices thick cut bacon, cooked til crisp and chopped
1-2cups shredded cheddar cheese
2tablespoonschopped green onions
Instructions
Grease your slow cooker and layer the tater tots in the bottom of the pot. In a skillet over medium heat, brown sausage for 4-5 minutes, then chop and layer on top of the tater tots. Sprinkle half the bacon over the top.
Whisk together eggs, milk, and seasoning packet. Pour over tater tots, sausage, and bacon. Sprinkle shredded cheese over the top, then add remaining bacon.
Cover slow cooker and cook on high for 2-3 hours, or on low for 4-5 hours. Sprinkle chopped green onions over the top and serve warm.
Notes
*If using frozen tater tots that haven't been thawed yet, add an extra 30 minutes to cooking time. *If you want to skip the sausage-browning step of the recipe, you can use fully cooked sausage and just chop up the sausage and add it to the slow cooker when directed in the recipe.
