8ouncespenne, cooked according to package's instructions
2tablespoonsolive oil
2cupsdiced butternut squash, boiled or steamed til tender
¼white or yellow onion, diced
½cupsliced mushrooms
1tablespoonminced garlic
⅓cupgoat cheese
2cupsbaby spinach
salt and pepper to taste
fresh herbs, for garnish
Instructions
Drizzle olive oil into a large skillet over medium heat. Add butternut squash, onions, mushrooms, and garlic and saute until mushrooms are tender.
Stir in penne, spinach, and goat cheese until goat cheese is melted. Season with salt and pepper to taste. Garnish with fresh herbs such as thyme or oregano and serve immediately.
