Ingredients
8ouncesspaghetti noodles
1cupthinly sliced cabbage , (I used a combination of purple and green)
2green onions, chopped
1avocado, thinly sliced
¼cupshredded carrots
½cupshelled edamame
2tablespoonssliced almonds
sesame seeds, for topping
Sesame Ginger Dressing
½cupoil
¼cuprice vinegar
3tablespoonslow sodium soy sauce
1tablespoonbrown sugar
2teaspoonsminced garlic
½teaspoonground ginger
1teaspoonsesame oil
Instructions
Whisk together all dressing ingredients. Boil spaghetti noodles til tender, drain and set aside.
Combine spaghetti, cabbage, green onions, avocado, carrots, edamame, and almonds. Add dressing to taste, toss to coat, and sprinkle with sesame seeds and serve or cover and chill for 1-3 hours before serving.
