Ingredients
1/2cupbutter, , softened
3/4cupbrown sugar
1/4cupgranulated sugar
1teaspoonvanilla extract
1large egg
1/2cupcreamy peanut butter
1 1/4cupsflour
1 1/4cupsold fashioned rolled oats
1/2teaspoonbaking powder
1/2teaspoonbaking soda
1/2teaspoonsalt
1 1/2cupssemi sweet chocolate chunks, OR chopped dark baking chocolate
Instructions
Preheat oven to 375 degrees and very lightly grease a large baking sheet (or multiple if you have them).
In a large bowl cream butter and sugars for 2 minutes until light and fluffy. Add vanilla, egg, and peanut butter and mix well.
In a medium bowl whisk together flour, oats, baking soda, baking powder, and salt. Add dry ingredients to wet ingredients and mix until incorporated. Stir in chocolate chunks.
Place balls of cookie dough (about the size of a golf ball) on baking sheet about 3-4 inches apart. Bake for 10-12 minutes until golden. Allow to rest for a few minutes on the baking sheet before transferring to a cooling rack to cool completely. Store in airtight container at room temperature.
