The ultimate campfire treat: toasted marshmallow goodness sandwiched between homemade caramel coconut Samoa girl scout cookies!
Toast marshmallows. This can be done by roasting them over an open fire, OR microwaving them on high for 8-10 seconds, OR roasting them over a grill or gas stove, OR broiling them on a baking sheet in the oven for about 1 minute until golden brown (watch closely as they will burn easily!).
Place one Samoa cookie upside down. Place a toasted marshmallow on top of the upside down cookie. Top marshmallow with a second samoa cookie (right side up) and press down gently to squish the toasted marshmallow between the cookies. Enjoy!
