Asian Turkey Quinoa Meatballs
Tasty Asian-inspired meatballs made with turkey and quinoa! Lean, packed with protein and incredibly delicious!

Ingredients

  • 1 pound ground turkey , (I used very lean)
  • 1 cup cooked quinoa
  • 1 cup panko bread crumbs
  • 1 teaspoon sesame oil
  • 1 egg
  • 1 1/2 teaspoons minced garlic
  • 1/3 cup thinly sliced green onions
  • 1/8 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon chili powder

Sauce

  • 1/2 teaspoon hoisin sauce , (found in the Asian section at the grocery store)
  • 4 tablespoons rice vinegar
  • 1/4 teaspoon sesame oil
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon chili powder
  • 1 1/2 tablespoons soy sauce
  • 1 teaspoon minced garlic

Instructions

  • Preheat oven to 400. Line a baking sheet with foil and spray with cooking spray.
  • In a large bowl combine turkey, quinoa, and next 8 ingredients. Mix to combine all ingredients. Use your hands to roll mixture into balls and place each meatball onto prepared baking sheet an inch apart. Bake 10-12 minutes until meatballs begin to brown.
  • In a small sauce pan whisk together all sauce ingredients. Bring mixture to a boil, then reduce to a simmer. Serve cooked meatballs with sauce for drizzling or dipping. Garnish with green onions and sesame seeds if desired.
