Place chicken, water, and 1 cup hot sauce in a slow cooker. Cover and cook on high 4 hours or low 8 hours.
Minutes before serving, drain slow cooker and shred chicken with two forks. Add remaining 1 cup hot sauce to the slow cooker, give it a stir, and cover and cook 30 minutes longer.
Serve chicken on slider buns, top with slaw (and blue cheese crumbles if desired), drizzle with blue cheese dressing. Serve warm or at room temperature.
