Ingredients
3-4boneless skinless chicken breasts, chopped into 1 inch pieces
6cupchopped romaine hearts
salt and pepper
1teaspoongarlic powder
½teaspooncayenne pepper , (or to taste)
1cucumber, peeled and chopped
½cupsliced carrots
½head red cabbage, thinly chopped
5green onions, chopped
1red bell pepper, chopped
½cuppeanuts
Dressing
¼cuprice vinegar
¼cupsweet chili sauce
1teaspoonsesame oil
1teaspoonsugar
salt and pepper, to taste
⅛teaspoongarlic powder
⅛teaspooncayenne pepper
Peanut Sauce
½cupcreamy peanut butter
4tablespoonssoy sauce
2tablespoonsrice vinegar
1tablespoonbrown sugar
2teaspoonshot red chili sauce , (such as sriracha)
Instructions
Cook chicken in a large pan or skillet over medium heat, stirring throughout until cooked through and browned on all sides. Toss chicken with lettuce and veggies.
Whisk together all ingredients for the dressing. Pour over salad and toss to coat.
Whisk together all ingredients for the peanut sauce. Drizzle over salad and top with peanuts.

Store extra dressing in airtight container in fridge up to 1 week.
