Ingredients
1cupplain greek yogurt
2sticks butter, softened slightly
3cupssugar
3cupsflour
6large eggs
½teaspoonbaking soda
1teaspoonvanilla
zest of 2 limes + juice of 1 lime
Glaze
3cupspowdered sugar
2 ½tablespoonsmilk
juice of 1 lime
1 ½ - 2teaspoonscoconut extract
Instructions
Preheat oven to 325 degrees. Line 2 loaf pans with non-stick foil leaving 1-2 inches of overhang on each side. Lightly spray pans with cooking spray and set aside. In a large bowl cream butter and sugar until fluffy, about 3-4 minutes. Add greek yogurt, mix until creamy.
In a separate bowl whisk together baking soda and flour. Alternate adding flour mixture and eggs to wet ingredients, mixing between additions. Once flour and eggs have been completely incorporated, stir in vanilla, lime zest, and lime juice. Pour batter into prepared loaf pans and bake about 1 hour 20 minutes. Remove from oven and allow to cool on a wire rack.
For the glaze, mix together all ingredients and pour onto, or drizzle over loaves. Allow to cool completely before slicing and serving.
Notes
This recipe can be doubled and divided between two pans.
