Ingredients

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • ¼ teaspoon paprika, salt, onion powder, chili powder, and cumin
  • teaspoon garlic powder, and pepper
  • ½ teaspoon sugar

Sauce

  • ¼ cup mayo
  • 2 tablespoons ketchup
  • ½ teaspoon lime juice

Instructions

  • Preheat oven to 450 degrees. Wash and dry the sweet potatoes and cut off the ends. Chop the potatoes in half lengthwise. Cut into 1/4 inch strips (you may cut larger pieces, but the cook time will increase.)
  • Place cut potatoes in a large bowl  and toss with just enough olive oil to coat completely.
  • In a small bowl, mix all seasonings together. Sprinkle on potatoes and toss well to coat. Spread potatoes out on a single layer baking sheet, spreading out evenly. Bake for 10 minutes, remove from oven and turn potatoes over. Bake 10 additional minutes.*
  • While fries are baking, mix together ingredients for the sauce. When fries are done, remove from oven, sprinkle with coarse sea salt and serve warm.

Notes

This recipe results in softer fries. For crispier fries, add an addional 5-10 minutes on each side.
