Ingredients
6cupslettuce
⅓cupmini pepperonis , OR regular pepperonis, quartered
½cupmozzarella, cubed, or cheese sticks chopped
½-1cupgarlic croutons
1cucumber, peeled and chopped
3tablespoonssalted sunflower seeds
3tablespoonsgrated parmesan cheese
italian dressing
½cupextra virgin olive oil
¼cupred or white wine vinegar
¼cupgrated parmesan cheese
2tablespoonswater
1tablespoondried Italian seasoning
2teaspoonssugar
2teaspoonsdijon mustard
1teaspoonsalt, or to taste
½teaspooncracked black pepper, or to taste
pinch of red pepper flakes
Instructions
Combine all dressing ingredients in a jar, cover and shake until blended. Set aside until ready to use.
In a large bowl toss together lettuce, pepperoni, mozzarella, parmesan, cucumbers, and sunflower seeds.
Just before serving, give the dressing a good shake, then pour over salad and toss. Serve immediately.

Feel free to add diced or shredded chicken to make this salad a main dish!
