Peanut Butter Oatmeal Chocolate Chip Cookie Bars

Peanut butter oatmeal chocolate chip cookie bars are an easy, perfect solution for peanut butter and oatmeal cookie lovers! The best of two cookies, all wrapped up into one delicious, soft, chewy bar!

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup creamy peanut butter
  • 2 eggs
  • 1 tablespoon vanilla extract
  • 2 cups flour
  • 2 cups old fashioned rolled oats
  • cup shredded coconut flakes
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 2 cups semisweet chocolate chips
  • 1 teaspoon coarse sea salt

Instructions

  • Preheat oven to 350 degrees and line a 9x13 inch pan with foil or parchment.
  • In a large bowl cream together butter and sugars for about 2 minutes until light and fluffy.
  • Add peanut butter, eggs, and vanilla and mix well.
  • In a second bowl whisk together flour, oats, coconut flakes, salt, and baking soda.
  • Add dry ingredients to wet ingredients and mix until combined.
  • Stir in chocolate chips.
  • Press into an even layer in prepared pan.
  • Bake for 20-25 minutes. Remove from oven and immediately sprinkle sea salt over the tops of the bars.
  • Allow to cool completely before cutting into bars and serving. Store in airtight container at room temperature.

Notes

Add-ins: These bars are very versatile and easily customizable. A few of my favorite add-ins include chopped nuts, white chocolate chips, m&m candies.
