Ingredients
6slices of bacon, cooked til crisp and chopped
1cupcooked ditalini pasta
3cupschopped romaine lettuce
2green onions, chopped
½cupgorgonzola or blue cheese crumbles
1cupcherry tomatoes, chopped
2cupsdiced cooked chicken, optional
Dressing
⅓cupolive oil
¼cupwhite wine vinegar
½cupmayo
1tablespoonlemon juice
2teaspoonsHerbs de Provence, or Italian seasoning
2teaspoonsminced garlic
¼cupfinely grated parmesan cheese
2teaspoonssugar
Instructions
Combine dressing ingredients in a food processor or blender and pulse til smooth.
Combine bacon, pasta, lettuce, gorgonzola, tomatoes, and chicken (if using). Toss with dressing and serve immediately.
Notes
Make ahead: If making ahead, cover tightly with plastic wrap and keep in the fridge - wait to toss with dressing until just before serving.
