Packed with flavor, this sweet and savory Berry Orzo Spinach Salad will leave you amazed. Never has a salad been this satisfying!

Ingredients

  • cup orzo, cooked
  • 2 cups baby spinach, packed
  • 1 cups baby arugula, packed
  • 1 cup blueberries
  • ½ cup strawberries, halved or quartered
  • 1 avocado, diced or sliced
  • ½ cup crumbled feta cheese, or freshly shredded mozzarella
  • ¼ cup chopped nuts, walnuts, pecans, or almonds
  • 1 cup Creamy Balsamic Dressing

Instructions

  • Toss together spinach, arugula, and orzo. Top with fruit, cheese, and nuts. Serve with balsamic dressing. Enjoy!

Notes

Orzo: wild rice makes a great substitute in this salad!
Fruit alternate: blackberries, peaches or nectarines are all incredible in this salad.
