This Mediterranean Salad with Greek Salad Dressing is a refreshing salad with a gorgeous assortment of veggies, topped with a homemade addictive dressing!

Ingredients

For the Mediterranean Salad

  • 1 small red onion, thinly sliced
  • 1 red bell pepper, chopped (optional)
  • 1 green bell pepper, chopped (optional)
  • 1 10 oz pack grape tomatoes, quartered
  • 1 cup crumbled feta cheese
  • ½ cup kalamata olives
  • 1 small English cucumber, peeled and chopped
  • salt , to taste
  • cracked pepper, to taste

For the Greek Salad Dressing

  • 2 tbsp extra virgin olive oil
  • 2 tsp red wine vinegar
  • 1 tsp dried oregano
  • zest of 1/2 small lemon

Instructions

  • Soak the onion slices in a bowl of cold water to remove their acidic bite. Set aside.
  • Whisk together all of the dressing ingredients.
  • Place all of the salad ingredients into a large bowl and season with a little salt and lots of cracked black pepper. Drain and pat dry the onion slices on a piece of paper towel before adding them to the bowl.
  • Add the dressing and gently fold the salad together, taking care not to break up the feta too much. Add more salt and pepper if needed before serving.

Notes

  1. Feta cheese crumbles can be used in this recipe, but you’ll get a better texture of salad and bigger chunks of cheese if you crumble a block of feta yourself. 
  2. This salad is best eaten on the day it is made.
