This Mediterranean Salad with Greek Salad Dressing is a refreshing salad with a gorgeous assortment of veggies, topped with a homemade addictive dressing!

Ingredients
For the Mediterranean Salad
1small red onion, thinly sliced
1red bell pepper, chopped (optional)
1green bell pepper, chopped (optional)
110 oz pack grape tomatoes, quartered
1cupcrumbled feta cheese
½cupkalamata olives
1small English cucumber, peeled and chopped
salt , to taste
cracked pepper, to taste
For the Greek Salad Dressing
2tbspextra virgin olive oil
2 tspred wine vinegar
1tspdried oregano
zest of 1/2 small lemon
Instructions
Soak the onion slices in a bowl of cold water to remove their acidic bite. Set aside.
Whisk together all of the dressing ingredients.
Place all of the salad ingredients into a large bowl and season with a little salt and lots of cracked black pepper. Drain and pat dry the onion slices on a piece of paper towel before adding them to the bowl.
Add the dressing and gently fold the salad together, taking care not to break up the feta too much. Add more salt and pepper if needed before serving.
Notes
Feta cheese crumbles can be used in this recipe, but you’ll get a better texture of salad and bigger chunks of cheese if you crumble a block of feta yourself.
