Greek Chicken Marinade

Greek Chicken Marinade makes the most tender and flavorful chicken ever! This is an absolutely delicious way to marinade your chicken using Greek-inspired flavors for a fresh, easy chicken dinner.

Ingredients

  • 6 tbsp plain or Greek-style yogurt
  • 4 tbsp olive oil
  • 2 tbsp runny honey
  • 2 tbsp minced garlic
  • 1 ½ tbsp dried oregano
  • ½ tbsp dried thyme
  • 2 tsp red wine vinegar
  • 2 tsp salt
  • zest of 1 lemon
  • cracked black pepper, to taste
  • 2 lb chicken breasts pounded to 3/4 inch thickness, or skinless boneless thighs

Instructions

  • Combine the yogurt, olive oil, honey, garlic, dried herbs, vinegar, salt, lemon zest and a generous amount of black pepper in a large bowl. Add the chicken pieces and stir until coated. Marinate for at least 2 hours, up to 24 hours.
  • To cook the chicken, shake off most of the marinade and either grill or cook in a cast iron skillet with a splash of oil or cooking spray for 15 minutes, or until just cooked through. 

Notes

Skewers option: If you wish to cube the chicken to make skewers, chicken thighs work best, cubed before marinating.
