Ingredients
For the Chicken Caesar Salad Wraps
2large chicken breasts
salt , to taste
cracked black pepper, to taste
cooking spray
4large plain or spinach flour tortillas
2 ½cupschopped romaine lettuce
¼cupparmesan shavings, optional
For the Caesar Salad Dressing
½cupextra virgin olive oil
3tbspshredded parmesan
2tbspplain yogurt
1tbspfresh lemon juice
1tbspred wine vinegar
¼tspgarlic granules
4anchovy filets packed in oil, chopped
salt, to taste
cracked black pepper, to taste
Instructions
Using a sharp knife, butterfly the chicken breasts by halving them each down the middle almost the entire way, but still leaving each half connected so they can open up like a book, still in one piece. Flatten the fatter parts of the chicken with the heel of your hand so it cooks evenly, and season well with salt and pepper.
Heat a large non-stick skillet or frying pan over a medium high heat. Spray with cooking spray and cook the chicken for a few minutes on each side until it is golden and cooked through. Remove from the heat and set aside.
To make the dressing blitz the olive oil, shredded parmesan, yogurt, lemon juice, red wine vinegar, garlic granules and anchovies in a bullet blender or mini chopper until smooth. Season to taste with salt and pepper.
Slice the chicken and divide between the wraps along with the romaine lettuce, parmesan shavings and the dressing.
Notes
The parmesan shavings are a delicious addition, but you can leave them out for a lighter wrap.
If you can find smoked garlic granules, they’ll add more flavor to the Caesar dressing.
Both the chicken and the dressing for these wraps can be made up to 3 days ahead so they’re great for meal prep - the chicken tastes good either warm or cold.
