  • 8 ounces spaghetti noodles
  • 1 cup thinly sliced cabbage (I used a combination of purple and green)
  • 2 green onions chopped
  • 1 avocado thinly sliced
  • ¼ cup shredded carrots
  • ½ cup shelled edamame
  • 2 tablespoons sliced almonds
  • sesame seeds for topping

Sesame Ginger Dressing

  • ½ cup oil
  • ¼ cup rice vinegar
  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons minced garlic
  • ½ teaspoon ground ginger
  • 1 teaspoon sesame oil


  • Whisk together all dressing ingredients. Boil spaghetti noodles til tender, drain and set aside.
  • Combine spaghetti, cabbage, green onions, avocado, carrots, edamame, and almonds. Add dressing to taste, toss to coat, and sprinkle with sesame seeds and serve or cover and chill for 1-3 hours before serving.


Can be made up to one day in advance.
