Ingredients
3cansDr. Pepper soda, (for a healthier treat use Dr. Pepper 10 - it's our favorite! But any Dr. Pepper soda will work), chilled
Coconut Lime Sorbet
1cupsweetened coconut milk , (not condensed - you can find coconut milk in the Asian section at your grocery store)
½teaspooncoconut extract
4cupslimeade , (I used Simply Limeade but you could use another brand or make fresh limeade as well)
optional: limes for garnish
Instructions
In a large bowl whisk together coconut milk, limeade, and coconut extract. Either 1) freeze in your ice cream maker according to your maker's instructions and then freeze for 30-60 minutes in a shallow container OR 2) Pour mixture into a shallow container and freeze at least 4 hours or overnight.
To prepare floats, place a couple of scoops of sorbet into your serving glasses (I used mason jars but you can use any cups/mugs/glasses you like). Pour chilled Dr. Pepper into glasses. Serve immediately with a straw or spoon and garnish with limed if desired. Enjoy!
Notes
Depending on which method you use for freezing the sorbet, your freeze time will be between 1 and 4 hours.
