This bright salad hits the spot with fresh crisp veggies and a sweet and tangy strawberry sesame dressing that's so good you'll want to drink it straight! A healthy dinner or side dish that comes together in a few minutes! The whole family will love it!

Ingredients
6-8cupsromaine lettuce,, chopped
1/2red onion,, thinly sliced
1red bell pepper,, thinly sliced
1jicama, , peeled and diced (about 1.5 cups)
optional: wonton strips , (found near the salad dressings and croutons)
(for a non-vegetarian version, you can add grilled chicken!)
Dressing
1 - 1 1/2cupsstrawberries, , hulled and quartered
1/3cupoil, (I used extra virgin olive oil)
1/2tablespoonhoney
1/2teaspoonsesame oil
5tablespoonsrice vinegar
1/2teaspoonsalt
1teaspoonsesame seeds
Instructions
Whisk together all ingredients for the dressing. Cover and chill until ready to serve.
In a large bowl toss together lettuce, peppers, onions, and jicama. Serve with prepared dressing and top with crispy wonton strips and additional sesame seeds if desired. Enjoy!
Notes
*jicama is optional, if you can't find it at the store, just skip it - it will still be delicious! **may sub distilled vinegar for rice vinegar in a pinch
