Asian Strawberry Sesame Salad
This bright salad hits the spot with fresh crisp veggies and a sweet and tangy strawberry sesame dressing that's so good you'll want to drink it straight! A healthy dinner or side dish that comes together in a few minutes! The whole family will love it!

Ingredients

  • 6-8 cups romaine lettuce,, chopped
  • 1/2 red onion,, thinly sliced
  • 1 red bell pepper,, thinly sliced
  • 1 jicama, , peeled and diced (about 1.5 cups)
  • optional: wonton strips , (found near the salad dressings and croutons)
  • (for a non-vegetarian version, you can add grilled chicken!)

Dressing

  • 1 - 1 1/2 cups strawberries, , hulled and quartered
  • 1/3 cup oil, (I used extra virgin olive oil)
  • 1/2 tablespoon honey
  • 1/2 teaspoon sesame oil
  • 5 tablespoons rice vinegar
  • 1/2 teaspoon salt
  • 1 teaspoon sesame seeds

Instructions

  • Whisk together all ingredients for the dressing. Cover and chill until ready to serve.
  • In a large bowl toss together lettuce, peppers, onions, and jicama. Serve with prepared dressing and top with crispy wonton strips and additional sesame seeds if desired. Enjoy!

Notes

*jicama is optional, if you can't find it at the store, just skip it - it will still be delicious!
**may sub distilled vinegar for rice vinegar in a pinch
