Ingredients
4large boneless skinless chicken breasts, pounded to even ¾ inch thickness or less
2tablespoonsolive oil
salt and pepper , to taste
1teaspooncumin
1teaspoonchili powder
1teaspoongarlic powder
½teaspoonItalian blend seasoning, (or make your own with dried basil, dried thyme, dried oregano)
Mango Salsa
2mangoes
½red or white onion, diced
1red bell pepper,, diced
1bunch cilantro, chopped
¼teaspoonsalt
juice of 1 lime
Instructions
In a medium bowl stir together all of the ingredients for the mango salsa, set aside.
Drizzle chicken with oil, then season with salt and pepper to taste. Stir together cumin, chili powder, garlic powder, and Italian seasonings. Season chicken with spices.
GRILL chicken over medium-high heat, or BAKE at 375 degrees for 20 minutes or until cooked through. Serve immediately with mango salsa.
Notes
Store extra salsa in the fridge, covered tightly, for up to three days. Flavor tip: Add 1 seeded, diced jalapeno to the mango salsa for a bit of a kick.
