Greek Chopped Salad - Creme de la Crumb
A fresh chopped salad with a gorgeous assortment of veggies and a Greek dressing so delicious you could drink it straight!

Ingredients

  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 6 cups chopped romaine , or hearts of romaine lettuce
  • ½ cup Kalamata olives, halved or diced
  • 1 large tomato, chopped
  • 1 red onion, chopped
  • 1 large cucumber, peeled and chopped
  • ½ cup crumbled feta cheese

Dressing

  • ½ cup olive oil
  • ½ cup red wine vinegar
  • 1 teaspoon dijon mustard
  • 1 ¼ teaspoon dried oregano
  • 1 ¼ teaspoon garlic powder
  • 1 ¼ teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon onion powder

Instructions

  • Whisk together all ingredients for dressing and store in a covered container at room temperature until ready to use.
  • In a large bowl, add romaine lettuce, olives, tomatoes, onions, cucumbers, and toss to combine. Top with feta cheese and salad dressing. Enjoy!

Add your favorite protein such as chicken, steak, or shrimp.
