Ingredients
1red bell pepper, diced
1onion, diced
2teaspoonsminced garlic
2cupsvegetable broth
1can tomato sauce
1canblack beans, drained and rinsed
1cancannellini beans, drained and rinsed
1cangreat northern beans, drained and rinsed
1canred kidney beans, drained and rinsed
1canpinto beans, drained and rinsed
2 ½teaspoonscumin
1teaspoonpaprika , (or smoked paprika)
1teaspoonsalt
1teaspoongarlic powder
Instructions
Add red peppers and onions to a large pot and sauté over medium high heat until onions are translucent. Add garlic and sauté another minute until fragrant. Add broth, tomato sauce, and all beans. Bring to a boil.
Add cumin, paprika, salt, and garlic powder. Reduce heat to a simmer and cook 15-20 minutes longer, stirring throughout. Serve hot with sliced green onions, cheese, sour cream, or other toppings as desired.
