Freeze 2 hours. When sandwiches have frozen completely, remove from freezer and slice between each set of graham crackers so that you have 3 long bars. Slice each bar in half width wise so that you now have 6 square ice cream sandwiches.
Melt your chocolate and with shortening and microwave in a double boiler. Dip the sandwiches in the melted chocolate with with tongs, or use a spoon to ladle chocolate over the ice cream sandwiches. If desired, melt white chocolate and drizzle over sandwiches. Freeze at least 20 minutes before serving. Store in an airtight container in the freezer for up to 7 days.
