Ingredients
4-6cupslettuce
4strips of bacon, cooked til crisp and chopped
1avocado, sliced
⅓cupcrumbled feta cheese
2tablespoonstoasted sunflower seeds
2cooked boneless skinless chicken breasts, OR 2 cups cubed or shredded chicken
vidalia onion dressing
1medium vidalia onion, diced
½cupolive oil
⅓cuphoney, or more to taste
¼cupapple cider vinegar
1teaspoonminced garlic
⅓cupfresh squeezed orange juice
2tablespoonsdijon mustard
½teaspoonsalt, or to taste
¼teaspoonpepper, or to taste
2tablespoonsmayo , (optional, to thicken the dressing)
chicken marinade (optional)
¼cupolive oil
3tablespoonsbalsamic vinegar
2teaspoonsdijon mustard
1teaspoonminced garlic
½teaspoonsalt
¼teaspoonpepper
Instructions
If using the chicken marinade, combine all marinade ingredients in a bowl, add chicken and toss to coat, cover and chill for 30 minutes. Bake or grill until cooked through, chop and set aside.
Combine dressing ingredients in a food processor or quality blender, pulse until smooth.
Assemble salad with lettuce topped with chicken, bacon, avocado, feta, and sunflower seeds. Drizzle dressing over everything and serve.
Notes
If you're short on time, use your favorite pre-cooked grilled or shredded chicken!
