A fast, delicious, easy, healthy, grilled citrus dijon chicken marinade for hectic weekday nights or unexpected dinner guests, cooked and ready to devour in just 15 minutes!

Ingredients
4boneless skinless chicken breasts
Marinade
½cupolive oil
2tablespoonsdijon mustard
juice of 1 lime
juice of 1 lemon
juice of 2 oranges
1teaspoonsalt
1teaspoongarlic powder
1teaspoonItalian seasoning, or Herbs de Provence (see note)
Combine all marinade ingredients and whisk vigorously to combine (or combine in a jar, cover and shake well). Reserve 1/4 cup of the marinade and set aside for later.
In a bowl or large zip-close bag, combine chicken and marinade (excluding reserved portion) and toss to coat well. Chill 1 hour or up to overnight.
When ready to cook, preheat grill to medium and oil the grates. Use tongs or a fork to place chicken on the grill. Cook 5-7 minutes, then turn and brush half of the reserved marinade on the tops of all the chicken.

Serve immediately, garnish with fresh herbs and lemon, lime, and/or orange wedges for squeezing. Enjoy!
Notes
For a DIY herb blend, simply stir together 1/4 teaspoon each dried thyme, parsley, oregano, and basil. Double or triple this to have some on hand for later!You can marinate this chicken for as little as 30 minutes. I recommend at least 1 hour for best results and up to 12 hours for maximum flavor. You can substitute more of one or another kind of citrus if you are lacking variety. All lemon or all lime works very well if that's what you have on hand! For an extra flavor boost, double the garlic powder and the crushed red pepper flakes!Herbs de Provence is my secret weapon. Keep it in your pantry and use it in place of Italian seasoning in any recipe!
