Ingredients
6cupschopped lettuce
2roma tomatoes, sliced
½red onion, thinly sliced
¼cupshredded carrots
½cupwhole black olives
⅓cupshaved or freshly grated parmesan, more to taste
1cupgarlic croutons
pepperocinis
Olive Garden Salad Dressing
1.7ounceZesty Italian Dressing Mix
¾cupextra virgin olive oil
⅓cupwhite vinegar
¼cupwater
1teaspoondijon mustard
1tablespoonmayo
½teaspoongranulated sugar
1/2 teaspoongarlic powder
1/2teaspoonherbs de Provence, optional
½teaspoonsalt, or to taste
cracked black pepper, to taste
Instructions
In a large bowl toss together lettuce, tomatoes, carrots, onions, and olives.
Top with parmesan, croutons, and pepperocinis.
Combine all dressing ingredients in a jar, shake vigorously.

Notes
Lettuce: I like to use romaine hearts but any green leave lettuce will do. Extra dressing: This dressing keeps well in a jar in the fridge for a few weeks.
