Ingredients
1poundcheese tortellini pasta , (either fresh, or dried - cooked according to package's instructions)
1cupcherry tomatoes, halved
½redonion, diced
1largecucumber, peeled and chopped
½cupcanned artichoke hearts, roughly chopped
½cupkalamata olives , (whole or sliced)
½cupcrumbled feta cheese , (I use reduced fat)
⅓cuppacked fresh basil leaves, finely chopped
Greek Dressing
½cupextra virgin olive oil
⅓cupapple cider vinegar
1tablespoonminced garlic
1teaspoondried oregano
1teaspoondried basil
½teaspoondried thyme
2teaspoonssugar
1tablespoondijon mustard
½teaspoonsalt, or to taste
black pepper, to taste
juice of ½ lemon
Instructions
Combine all dressing ingredients in a jar, cover and shake well.
In a large bowl combine tortellini, tomatoes, onions, cucumbers, artichoke hearts, olives, feta cheese, and basil. Pour dressing over the top, then toss to combine.
Serve immediately OR cover and refrigerate up to 6 hours before serving.
