A simple marinade turns this brown sugar bourbon chicken & mushroom melt into a hearty and flavorful sandwich you'll put on repeat on summer long!
Place chicken in a large resealable bag along with contents of the marinade packet. Seal and refrigerate for 30 minutes.
Grease and preheat your grill. Place chicken on the grill and discard marinade. Cook chicken 6-8 minutes one each side until cooked through.
While chicken is grilling, prepare the mushrooms. Melt butter in a medium pan. Add mushrooms and garlic and saute over medium heat 2-4 minutes until mushrooms are tender and garlic is fragrant.
Spoon some of the mushrooms onto each of the chicken breasts. Top with 1 or 2 slices of cheese, cover grill until cheese is melty (1-2 minutes).
Slice your rolls/buns and assemble your sandwiches by first spreading mayo onto the bottom half of the rolls, then topping with lettuce, chicken, and top of roll. Serve immediately.
