Easy Banana Pancakes

Fluffy and delicious, easy banana pancakes recipe you'll want to whip up for every occasion big and small. Make a batch in advance and keep them on hand for busy mornings!

Ingredients

  • 1 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 2 bananas, one mashed and one sliced
  • 2 large eggs
  • cup plain yogurt or buttermilk
  • 1 ½ tablespoons olive oil
  • 2 teaspoons maple syrup, plus more for serving
  • ½ teaspoon vanilla
  • cooking spray or melted butter, for frying

Instructions

  • Whisk together the flour, baking powder, cinnamon, and salt. Set aside.
  • Whisk together mashed banana, eggs, yogurt or buttermilk, oil, maple syrup, and vanilla until smooth. Pour into the flour mixture and stir until just combined.
  • Heat a large non-stick frying pan or skillet over medium heat. Grease with cooking spray or butter before cooking the pancakes. Place a couple of slices of banana on top of each spoonful of batter as you add them to the pan.
  • Working in batches (cover and keep the cooked pancakes warm ready to serve) cook for a few minutes on the first side. Flip and continue to cook a few minutes longer until golden brown and bananas have had a chance to caramelize. Serve with maple syrup.

Notes

For a healthier option in the mornings, sub in some or all of the flour for wholemeal flour.
