Prep Time: 5 minutesminutes
Cook Time: 15 minutesminutes
Total Time: 20 minutesminutes
Servings:6servings
Ingredients
1tbspbutter
1banana shallot, finely chopped
salt, to taste
4tbspapple cider vinegar
½cupheavy cream
6ozblue cheese, crumbled and divided
1tspWorcestershire sauce
½tspgarlic powder
black pepper, to taste
1tbspchopped chives
Instructions
Melt the butter in a medium saucepan over a medium heat. Add the shallot with a pinch of salt and gently cook for about 5 minutes until soft and just starting to color.
Splash in the apple cider vinegar and allow to bubble for one minute before stirring in the heavy cream, half the blue cheese, Worcestershire sauce and garlic powder. Once the mixture is bubbling, allow to cook for 5 minutes so that the cheese melts and the sauce thickens.
Remove from the heat and stir in the remaining blue cheese and the chives. Season to taste with salt and pepper, and serve immediately.
Notes
For extra flavor, pan sear your steak in the same pan that you plan to make the sauce! You can keep the brown bits that come off the steak in the pan and they will end up adding loads of flavor to the sauce.
For a thicker sauce, keep stirring and cook at a low simmer until the sauce has reduced slightly and thickened! If the sauce is too thick, add a splash of milk or even lemon for a slightly lighter flavor!
