Blue Cheese Steak Sauce

Blue cheese and steak are a match made in heaven, so why not make a rich and creamy Blue Cheese Steak Sauce to serve with a perfectly grilled steak? It is easy to make, packed with flavor, and a little goes a long way!

Ingredients

  • 1 tbsp butter
  • 1 banana shallot, finely chopped
  • salt, to taste
  • 4 tbsp apple cider vinegar
  • ½ cup heavy cream
  • 6 oz blue cheese, crumbled and divided
  • 1 tsp Worcestershire sauce
  • ½ tsp garlic powder
  • black pepper, to taste
  • 1 tbsp chopped chives

Instructions

  • Melt the butter in a medium saucepan over a medium heat. Add the shallot with a pinch of salt and gently cook for about 5 minutes until soft and just starting to color.
  • Splash in the apple cider vinegar and allow to bubble for one minute before stirring in the heavy cream, half the blue cheese, Worcestershire sauce and garlic powder. Once the mixture is bubbling, allow to cook for 5 minutes so that the cheese melts and the sauce thickens.
  • Remove from the heat and stir in the remaining blue cheese and the chives. Season to taste with salt and pepper, and serve immediately. 

Notes

  • For extra flavor, pan sear your steak in the same pan that you plan to make the sauce! You can keep the brown bits that come off the steak in the pan and they will end up adding loads of flavor to the sauce.
  • For a thicker sauce, keep stirring and cook at a low simmer until the sauce has reduced slightly and thickened! If the sauce is too thick, add a splash of milk or even lemon for a slightly lighter flavor!
  • Serve this blue cheese steak sauce with steak and potatoes and your choice of vegetable, or even pair this with leaner meats like chicken with garlic herb butter!
