Ingredients
1 ½sticks butter
3cupssugar
⅔cupevaporated milk
12oz70% dark chocolate, chopped
7 ozmarshmallow fluff, or jet puffed marshmallow creme
½tbspvanilla extract
Instructions
Line a 9x9 pan with a double layer of food wrap and set aside.
Measure the butter, sugar and evaporated milk into a large, heavy-bottomed saucepan or casserole dish. Set over a medium high heat and stir until the butter has melted the sugar has started to dissolve.
Keep heating the mixture until a sugar thermometer reaches the soft ball stage at 234F. Make sure you keep stirring the mixture to prevent the butter and sugar burning at the bottom.
Remove the pan from the heat and stir in the chocolate until it has all melted. Stir in the marshmallow fluff and vanilla until no streaks remain.
Using a heatproof spatula, scrape the mixture into the prepared pan, spreading it out so the top is smooth. Don’t worry if you have a layer of melted butter separating on top of the fudge: this will disappear as it cools.
Cool the fudge completely at room temperature before slicing.
Notes
The original Fantasy Fudge recipe uses semi-sweet chocolate chips and chopped walnuts. If you prefer a sweeter fudge use semi-sweet chocolate instead. If you wish to add back in the walnuts, or even some chopped pecans, you’ll need 1 cup.
