Dirty Rice
Traditional flavors served up in a fresh new way - Cajun Dirty Rice made with the ingredients you've got on hand. Serve this filling dish as a main and use the leftovers for side dishes or lunches all week long!

- 3 tablespoons olive oil
- ½ pound ground pork
- ½ pound ground beef
- ½ medium yellow onion diced
- 1 red bell pepper diced
- 1 green bell pepper diced
- 1 stalk celery chopped
- 3 teaspoons minced garlic
- 1 ½-2 teaspoons salt to taste
- 1 teaspoon cracked black pepper
- 2 cups long grain white rice
- 3 cups beef broth see note
- 1 tablespoon Herbs de Provence or Italian herb blend
- ½ teaspoon chili powder
- handful of curly parsley finely chopped
Stir together hot water and Zoup! Chicken or Beef Base with Bone Broth.
Drizzle a large skillet (with a lid) with olive oil and bring to heat over medium-high heat.
Add onions, bell peppers, celery, and garlic and saute 2 minutes. Scoot everything over to one half of the pan.
Add the meats to the empty side of the pan and brown, breaking up with a spoon, for 4-5 minutes.
Stir everything together. Add rice, salt, pepper, chili powder, Herbs de Provence, and broth.
Bring liquid to a boil, reduce to simmer, cover and cook for 20-25 minutes until rice is tender.
Fluff with a fork, stir in chopped parsley and serve.
Broth: You can use prepared beef broth, or 3 cups hot water + 3 teaspoons beef broth concentrate.
Storage and leftovers: This Cajun Dirty Rice can be kept in a container with a lid in the fridge for up to 5 days.
Freezing: You can put this dish in the freezer in an airtight container for up to 5 months.
Meat swaps: You can easily substitute ground chicken or turkey (or both) for the pork and/or beef. For even more Cajun flavor, swap the ground meat for andouille sausage.
Make it spicy: Spice this dirty rice dish up by adding red pepper flakes before simmering. Or, top with your favorite hot sauce or some diced, pickled jalapenos before eating.
