- 1 wheel brie cheese chilled
- 1 yellow onion thinly sliced
- salt a big pinch
- 4 tablespoons butter I used salted
- 1 jar fig jam or fig preserves see note for substitute
- ½ cup candied or toasted pecans or walnuts
- 3 tablespoons honey or hot honey
- fresh herbs for topping optional, rosemary or thyme work great
- crackers, apples, pears, bread for serving
Preheat oven to 350 degrees. Line a baking sheet or baking dish with parchment or foil. While oven is preheating, proceed with next step.
In a skillet (I like cast iron and do not recommend stainless steel for this), sprinkle onions with salt and saute over medium-high heat for 3-4 minutes. Reduce heat to medium-low and add butter to skillet. Cook 10 minutes, stirring occasionally. Keep on the heat while proceeding with next step.
Score top of Brie wheel and place on parchment-lined pan. Bake for 10 minutes.
Stir brown sugar into onions for 1-2 minutes and turn off the heat and stir in the nuts.
Remove brie from the oven. Top baked brie with fig spread, caramelized onions and nuts, and fresh herbs (if using). Arrange apples and crackers around the brie for serving. Cut into the brie and serve immediately. Enjoy!
The fig jam: if you don't care for fig jam or can't get your hands on some, raspberry jam works great here!
The caramelized onions: if you really want to make this recipe super duper quick, skip the caramelized onions and just serve it with the jam and nuts!
