Grilled Malibu Chicken

Juicy Grilled Malibu Chicken topped with thick cut ham, swiss cheese, and an incredibly yummy sauce served beside fresh pineapple!  The prep is minimal, it's pretty healthy, and the flavors just can't be beat.

Ingredients

  • 4 boneless skinless chicken breasts pounded to ½ inch thickness
  • salt & pepper to taste
  • ½ teaspoon garlic powder
  • ¼ teaspoon chili powder
  • 4 slices thick-cut ham
  • 4 slices swiss cheese

Sauce

  • 2 tablespoons dijon mustard
  • 3 tablespoons mayo
  • 1 tablespoon yellow mustard
  • ½ teaspoon worcestershire sauce
  • ¼ teaspoon garlic powder

Instructions

  • Season chicken breasts with salt & pepper to taste, garlic powder, and chili powder. Grill over medium heat 4-5 minutes each side until cooked through.
  • While still on the grill, top chicken breasts with ham slices and swiss cheese. Allow to continue cooking until cheese is melty.
  • Whisk together all sauce ingredients. Serve chicken topped with the sauce, beside chopped pineapple if desired. Enjoy!

Notes

Serve with grilled pineapple!
