Strawberry Spinach Pasta Salad with Orange Poppy Seed Dressing
Sweet and tangy strawberry spinach pasta salad with orange poppyseed dressing is the perfect potluck side dish for every backyard bbq, party, and get together.
8ounces penne noodlescooked according to package directions
2cupspacked fresh baby spinach leaves
1cupsliced strawberries
1cuppineapple chunks
¼cupdried cranberriesor dried blueberries
½cupsalted cashewsor other nut like pecans or walnuts
Orange Poppyseed Dressing
½cupextra virgin olive oil
⅓cupapple cider vinegar
¼cupplain greek yogurt
1tablespoondijon mustard
3tablespoons honey
⅓cuporange juice
2teaspoonspoppy seeds
optional: pinch of salt and pepper
Instructions
Combine all dressing ingredients in a jar, cover, and shake well. Set aside.
Combine penne, spinach, strawberries, pineapple, cranberries, and cashews in a large bowl and toss with the prepared dressing.
Serve immediately or cover and chill for 1 hour before serving.

Make ahead:prepare this salad ahead of time by preparing as written, but do not toss with the dressing. Store salad and dressing in airtight containers in fridge up to 24 hours before serving. Toss with dressing immediately before serving.
