Ingredients

  • cup orzo cooked
  • 2 cups baby spinach packed
  • 1 cups baby arugula packed
  • 1 cup blueberries
  • ½ cup strawberries halved or quartered
  • 1 avocado diced or sliced
  • ½ cup crumbled feta cheese or freshly shredded mozzarella
  • ¼ cup chopped nuts walnuts, pecans, or almonds
  • 1 cup Creamy Balsamic Dressing

Instructions

  • Toss together spinach, arugula, and orzo. Top with fruit, cheese, and nuts. Serve with balsamic dressing. Enjoy!

Orzo: wild rice makes a great substitute in this salad!
Fruit alternate: blackberries, peaches or nectarines are all incredible in this salad.
