- ⅔ cup orzo cooked
- 2 cups baby spinach packed
- 1 cups baby arugula packed
- 1 cup blueberries
- ½ cup strawberries halved or quartered
- 1 avocado diced or sliced
- ½ cup crumbled feta cheese or freshly shredded mozzarella
- ¼ cup chopped nuts walnuts, pecans, or almonds
- 1 cup Creamy Balsamic Dressing
Toss together spinach, arugula, and orzo. Top with fruit, cheese, and nuts. Serve with balsamic dressing. Enjoy!
