Blueberry Crepe Filling

Nothing tops a crepe like this fruity, sweet Blueberry Crepe Filling! Creamy, cheesy, berry goodness all folded up in a sweet, thin pancake-like crepe? Breakfasts will never be the same again!

Ingredients

  • 1 cup heavy cream chilled
  • 4 ounces cream cheese
  • cup powdered sugar
  • ¼ cup blueberry preserves
  • ½ teaspoon vanilla extract

Instructions

  • In a large bowl, whip cream cheese for 2 minutes.
  • In a second bowl (preferably glass or metal, see note), whip heavy cream for 3-4 minutes until stiff peaks form.
  • Stir heavy cream into cream cheese.
  • Stir in powdered sugar, blueberry preserves, and vanilla until smooth.

Notes

Serving size is an estimate - this makes a sizable amount of filling and could easily fill a dozen crepes generously but could fill more to feed a crowd if you are more frugal with the filling. 
To speed up the process of whipping the cream, it is best to use very cold cream and a cold metal or glass bowl if possible.
