Mango Salsa

Colorful mango salsa with a hint of spicy red pepper, red onions, cilantro, and lime makes for a sweet-and-spicy salsa you won't be able to get enough of!

Ingredients

  • 2 large mangoes peeled and diced
  • 4 tbsp finely chopped red onion (approx 1/2 a small onion)
  • 2 tbsp finely chopped cilantro
  • 1 red chili pepper finely chopped
  • juice of 1/2 large lime
  • sea salt to taste

Instructions

  • Gently stir together the mango chunks, red onion, cilantro and chili. Fold in the lime juice, and add salt very sparingly to taste.

Notes

  1. This salsa is best consumed the day it is made, but will keep for up to 3 days in the fridge. It will become spicier the longer it rests.
