- 2 large mangoes peeled and diced
- 4 tbsp finely chopped red onion (approx 1/2 a small onion)
- 2 tbsp finely chopped cilantro
- 1 red chili pepper finely chopped
- juice of 1/2 large lime
- sea salt to taste
Gently stir together the mango chunks, red onion, cilantro and chili. Fold in the lime juice, and add salt very sparingly to taste.
- This salsa is best consumed the day it is made, but will keep for up to 3 days in the fridge. It will become spicier the longer it rests.
