Strawberry Avocado Salad with Honey Citrus Dressing

- 1 cup strawberries sliced
- ¼ red onion thinly sliced
- ⅓ cup feta cheese crumbles
- ⅓ cup chopped pecans toasted
- 1 avocado diced or thinly sliced
- handful of fresh mixed greens or baby arugula
Honey Citrus Dressing
- 3 tbsp honey
- ¼ cup fresh-squeezed orange juice about ½ an orange
- 2 tbsp fresh-squeezed lemon juice
- 1 tbsp dijon mustard
- ½ cup olive oil
- salt and pepper to taste
Combine honey citrus dressing ingredients in a jar and shake vigorously, or pulse in a blender or food processor until smooth. Taste, add salt and pepper if needed.
Toss together all of your salad ingredients, pour dressing over salad and toss just before serving.

- This salad is best the day it's made. It will keep in the fridge for another day or so but keep in mind the ingredients will become soggier the longer it rests in the fridge.
- For best results, store the dressing separately and toss this strawberry avocado salad right before serving.
