This is so many of my favorite things, coming together in one super easy and SUPER delicious summer meal.

You know that I’m a fan of salmon – BIG fan – and asparagus just might be my favorite summertime vegetable. Bring those together in a simple and easy to prepare foil pack dinner and I’m in heaven!

The herb butter is so simple. The key is just to let the butter come to room temperature ahead of time so that it is easy to mash with the garlic and seasonings with a fork. Drop a few dollops of that savory herb butter on top of the salmon and asparagus, wrap it all tightly in a neat little tin foil package, and cook it on the grill or in the oven.

These are tasty year round, but especially fun for Summer when you’re grilling out in the backyard, or camping. Prepare them ahead of time for an even quicker dinner! Oh and cleanup is a breeze! Eat straight from the foil and then toss when you’re done.

Herb Butter Salmon and Asparagus Foil Packs

Ingredients

  • 4 boneless skineless salmon fillets
  • salt and pepper to taste
  • 1 pound asparagus, ends trimmed
  • 1 lemon, thinly sliced, (plus additional wedges for garnish)
  • 1/2 cup butter, at room temperature
  • 3 teaspoons Italian seasoning
  • 3 teaspoons minced garlic
  • fresh thyme or parsley, for garnish

Instructions

  1. Season salmon generously with salt and pepper on both sides. Arrange one salmon fillet and 1/4 of the asparagus in the center of one 12x12 inch piece of foil. Repeat with remaining salmon and asparagus on 3 other pieces of foil. Slide lemon slices under the salmon and asparagus.

  2. In a small bowl mix butter, Italian seasoning, and garlic. Drop large dollops of the herb butter on top of the salmon and asparagus.

  3. Fold the foil tightly around the salmon and asparagus, being sure to seal the ends together tightly so the juices and butter doesn't run out while cooking. Grill over medium high heat for 6-8 minutes on each side, OR bake at 400 degrees for 20 minutes, until asparagus is tender and salmon is flaky.

  4. Drizzle fresh lemon juice over the top and serve immediately.

    Yes, you can use parchment paper if you would prefer! 🙂

      Just what I was thinking. Wrap it in the paper and then in foil so it does not burn. Might need a few extra minutes to cook.

    Good idea. The lemon is acid which reacts with the aluminum foil. Tomatoes are the same thing. If there is no acid, the aluminum will not leach into the food.

    Be advised that if you use parchment paper inside the foil, you need to cook way longer than a few extra minutes. I had mine in the oven for a little over 20 minutes and everything was still cold… the salmon, the asparagus, even the lemon slices! I’m not a innovative cook, so I was totally at a loss as to what to do… husband in late, needed to eat… dinner was a disaster.

    Yes! I have used a similar recipe every time using parchment paper instead of tin foil. it works great! you can also put some pesto sauce on top of the salmon to add more flavor!

What type salmon fillets are best to use?

    Hi Gwen! Any type of salmon fillets are fine. I prefer wild salmon. 🙂

It is a wonderful meal.However,no one should be cooking directly with aluminum…..It absorbs into the food
I wrap in parchment paper,then aluminum foil.
Aluminum has been shown to collect in the body,including the brain,especially children.

    Yes, chicken could be substituted. Just be sure to cut the chicken into no larger than 1 inch chunks and cook for an extra 10-15 minutes.

That is an awful lot of butter. I will half and hope it will still be tasty.

    It amounts to 1 tablespoon of butter per packet (part on salmon and part on veggie….doesn’t sound like too much for flavor and moisture. It might be too blain with less!

Has anyone tried this with salmon with the skin on? When salmon is cooked on foil, the skin comes off very easily because it sticks to the foil.

I’m just in the middle eating this and I already know I won’t be making it again.

There is too much butter and the italian seasoning over powers the delicate flavor of the salmon. It does nothing to enhance my favorite fish and I was left wishing I had stuck to my regular dill, chives, and white wine.

The texture of the fish was nice, but it always is when you cook it in a packet, and the seasoning went well with the asparagus.

I followed the directions and didn’t add any other ingredients. Unless you are a huge fan of italian seasoning I would look at some other recipes.

How do you grill on each side when in the foil packet? Sounds like all would spill out when you turn packet on a grill.

Would tilapia work with this? Would cooking time need to change?

    Tilapia will work fine and you shouldn’t need to adjust the cooking times unless it’s a very large piece of fish in which case it may need a bit longer. 🙂

Delicious! I’ve made it twice! I throw sliced potatoes in separate pouch and throw the same butter spread on potatoes. I separate the salmon and asparagus into separate Pouches and when I’m lazy I throw I oven. I put the asparagus and sliced potatoes I. 10 min prior to salmon. The delicateness & thickness of the filet dictates the time I cook it. But it’s a fool proof easy meal – a little prep for a great reward!!!

Was delish. Store had baby asparagus so extra yummy. And I made 2 with boneless skinless chicken thighs and 2 with salmon as the recipe called for. We have 2 non fish eaters in the family. All fit in my countertop pressure oven. Didn’t heat up the kitchen. Served it with a slice of crunchy sourdough bread no butter

    Cauliflower or green beans? I would boil either of those for a few minutes first so that they will cook quickly with the salmon. 🙂

    Hi Helen, No steps are missing but cooking these on the grill helps to get that browning on the salmon. If you really love a good browned surface on your salmon, I’d recommend searing it first on the stove or if baking, you can simply open up the packet for the last 3-4 minutes and switch your oven to broil. 🙂

Fresh or Frozen Salmon?

The Salmon looked nothing like the photos which was a disappointment but it was edible.

I just made this recipe tonight for my son’s 49th birthday! We all loved them and they were so easy to make….as long as you have everything (including the herbed butter) ready ahead of time. I did them in the oven but I will try them on the grill next time to maybe get a little more color (browning). Thanks for the recipe! We’ll try it with chicken, shrimp, and other seafood in the future. Love the easy clean up!!!

Instructions say to grill 6-8 per side. If they are in a foil packet with butter, etc., would this not leak out if they were flipped over? I would normally not expect something in a foil packet would have to be flipped over.

    If you have skin-on salmon, remove before proceeding with the recipe.

Baking in aluminum foil is not wise or healthy as it leaches into the food, especially spicy or acidic types of foods. I use your recipes with a Pyrex baking dish or other safer pots.

    What do you cover the pyrex with? Is foil ok as long As its not touching the food??

What an easy way to make dinner. I used a garlic pepper, sea salt blend and put a little directly on the salmon as well as on top of the asparagus. I would definitely make this again.

    Hi Tracy – Italian Seasoning is a specific spice you can purchase at the grocery store. If you can’t find it in your area, there are recipes on the internet that show you how to make it using oregano, marjoram, thyme, basil, rosemary, and sage.

    Yes, you could switch the salmon out for chicken. I do have another foil pack on here that is a lemon chicken and asparagus recipe if you are interested in that instead!! Simply search “chicken and asparagus foil packs” and it will come right up!

can you use lemon pepper instead of italian seasoning?

    It will alter the flavor significantly- but if lemon pepper is more of your preference, I suppose that you could give it a try. The italian season is a key player in the flavor of this dish! Definitely let me know how it turns out for you!
