This is so many of my favorite things, coming together in one super easy and SUPER delicious summer meal.

You know that I’m a fan of salmon – BIG fan – and asparagus just might be my favorite summertime vegetable. Bring those together in a simple and easy to prepare foil pack dinner and I’m in heaven!

The herb butter is so simple. The key is just to let the butter come to room temperature ahead of time so that it is easy to mash with the garlic and seasonings with a fork. Drop a few dollops of that savory herb butter on top of the salmon and asparagus, wrap it all tightly in a neat little tin foil package, and cook it on the grill or in the oven.

These are tasty year round, but especially fun for Summer when you’re grilling out in the backyard, or camping. Prepare them ahead of time for an even quicker dinner! Oh and cleanup is a breeze! Eat straight from the foil and then toss when you’re done.

It’s like magic.

Author:
Recipe type: Main Dish
Cuisine: American
Serves: 4
Ingredients
  • 4 boneless skinelss salmon fillets
  • salt and pepper to taste
  • 1 pound asparagus, ends trimmed
  • 1 lemon, thinly sliced, (plus additional wedges for garnish)
  • ½ cup butter, at room temperature
  • 3 teaspoons Italian seasoning
  • 3 teaspoons minced garlic
  • fresh thyme or parsley, for garnish
Instructions
  1. Season salmon generously with salt and pepper on both sides. Arrange one salmon fillet and ¼ of the asparagus in the center of one 12x12 inch piece of foil. Repeat with remaining salmon and asparagus on 3 other pieces of foil. Slide lemon slices under the salmon and asparagus.
  2. In a small bowl mix butter, Italian seasoning, and garlic. Drop large dollops of the herb butter on top of the salmon and asparagus.
  3. Fold the foil tightly around the salmon and asparagus, being sure to seal the ends together tightly so the juices and butter doesn't run out while cooking. Grill over medium high heat for 6-8 minutes on each side, OR bake at 400 degrees for 20 minutes, until asparagus is tender and salmon is flaky.
  4. Drizzle fresh lemon juice over the top and serve immediately.

This looks delicious and so easy to make. Thank you, I will prepare this dish for my elderly mother who loves salmon and asparagus (her favorite meal)

Can you use parchment paper because aluminum foil is bad for you!

Yes, you can use parchment paper if you would prefer! πŸ™‚

Just what I was thinking. Wrap it in the paper and then in foil so it does not burn. Might need a few extra minutes to cook.

Good idea. The lemon is acid which reacts with the aluminum foil. Tomatoes are the same thing. If there is no acid, the aluminum will not leach into the food.

Be advised that if you use parchment paper inside the foil, you need to cook way longer than a few extra minutes. I had mine in the oven for a little over 20 minutes and everything was still cold… the salmon, the asparagus, even the lemon slices! I’m not a innovative cook, so I was totally at a loss as to what to do… husband in late, needed to eat… dinner was a disaster.

Can’t wait to try this!
Do you think I could prep these and stick them in the freezer?

I haven’t tried this myself yet, but I think it would work! πŸ™‚

Always on the look out for those easy weeknight dinners for when my enthusiasm to get in the kitchen is no where to be found. Saving this for one of those times. Salmon and asparagus AND herb butter – YES!

Anywhere in the 4-8 ounce range works great! πŸ™‚

Yes it need more time for mer too!!

What temperature u set at in oven

Would it work with Tuna?

Yes! Just grill the foil packs for about 10 minutes per side.

On step 3, did you mean to type “Fold FOIL around salmon and asparagus…”? 😏
Can’t wait to try the recipe!

Looks great. I love dinners that you put in foil packs and throw on the grill. One little thing…check your recipe. Step three should read…Fold foil tightly around salmon and asparagus. Will be trying this weekend.

Thank you! That typo has been corrected. πŸ™‚ Hope you enjoy this recipe!

No typo not fixed but I knew you meant foil before I read all the reviews. Will Try this one for sure.

Hi Julie. I fixed the typo a few days ago. I guess it took a while to update.

Sounds great, thanks.

Could you do this recipe with Tuna steaks – and would they take the same amount of time to cook in the oven please?

Yes, you could do this with tuna! I would cook them for about 10 minutes per side. πŸ™‚

Been making something similar to this for 20 years – only using olive oil instead of butter. Love the idea of the asparagus! Will definitely try this tomorrow night.

Do you know how long to cook them in the oven for if I use broccoli instead?

You should be fine to cook this for the same amount of time when using broccoli instead of asparagus. πŸ™‚

I made this tonight. My wife LOVED IT!!! Not only was it easy to prepare but OMG, it was sooooo good. Thanks,

So glad you enjoyed this recipe, Carlton!

I think you meant “Fold the FOIL tightly around the asparagus and salmon.”

Yes, that it what I meant! I just corrected it! Thanks for pointing that out :).

What type salmon fillets are best to use?

Hi Gwen! Any type of salmon fillets are fine. I prefer wild salmon. πŸ™‚

It is a wonderful meal. However,no one should be cooking directly with aluminum…..It absorbs into the food
I wrap in parchment paper, then aluminum foil.
Aluminum has been shown to collect in the body, including the brain, especially children.

thank you, great idea using parchment paper!

“Fold asparagus tightly around the salmon and asparagus, being sure to seal the ends together” make no sense

but I do want you to know this sound delicious and I am making it for dinner tonight except I am using steel-head and I added some fingerling potatoes πŸ™‚

I was wondering if chicken could be used as a substitute? I love salmon but my boyfriend is not fan 😞

Yes, chicken could be substituted. Just be sure to cut the chicken into no larger than 1 inch chunks and cook for an extra 10-15 minutes.

Typo “Fold asparagus tightly around the salmon and asparagus” But it sounds great and we are going to try this.

Could you package all that up then throw it in the freezer for later cooking?

    Yes you could!

That is an awful lot of butter. I will half and hope it will still be tasty.

It amounts to 1 tablespoon of butter per packet (part on salmon and part on veggie….doesn’t sound like too much for flavor and moisture. It might be too blain with less!

Would tilapia work with this? Would cooking time need to change?

Tilapia will work fine and you shouldn’t need to adjust the cooking times unless it’s a very large piece of fish in which case it may need a bit longer. πŸ™‚

Was delish. Store had baby asparagus so extra yummy. And I made 2 with boneless skinless chicken thighs and 2 with salmon as the recipe called for. We have 2 non fish eaters in the family. All fit in my countertop pressure oven. Didn’t heat up the kitchen. Served it with a slice of crunchy sourdough bread no butter

This recipe was great… I really enjoyed cooking and eating this meal. I used 2 tsp of butter and season all with the minced garlic. Love it….

Definitely looks tasty. I need to try this. Thanks for sharing.

Sounds so yummy!!! I want to make this but what other veggie can you substitute for the Asparagus? Hubby doesn’t like Asparagus and I’m allergic to Broccoli?

Cauliflower or green beans? I would boil either of those for a few minutes first so that they will cook quickly with the salmon. πŸ™‚

I made this tonight. It was really delicious! Question, though…Is there a step missing in the cooking instructions? If not, how did you achieve the browning as shown in the pic?

Hi Helen, No steps are missing but cooking these on the grill helps to get that browning on the salmon. If you really love a good browned surface on your salmon, I’d recommend searing it first on the stove or if baking, you can simply open up the packet for the last 3-4 minutes and switch your oven to broil. πŸ™‚

      Thanks, Tiffany!

Fresh or Frozen Salmon?

I just made this recipe tonight for my son’s 49th birthday! We all loved them and they were so easy to make….as long as you have everything (including the herbed butter) ready ahead of time. I did them in the oven but I will try them on the grill next time to maybe get a little more color (browning). Thanks for the recipe! We’ll try it with chicken, shrimp, and other seafood in the future. Love the easy clean up!!!

What is a really good brand of Italian seasoning to use ?

What is the temperature?

Instructions say to grill 6-8 per side. If they are in a foil packet with butter, etc., would this not leak out if they were flipped over? I would normally not expect something in a foil packet would have to be flipped over.

hi I want to try to make but using parchment paper then wrap with foil… will I have to adjust temp? and how much longer do you think ill need to add to cooking time?

How can you store the leftovers?
It’s only my husband and I tonight.

I made this tonight and it was delicious and easy to prepare

Just wanted to know about the”skin” Do you remove it before or after,?

If you have skin-on salmon, remove before proceeding with the recipe.

Baking in aluminum foil is not wise or healthy as it leaches into the food, especially spicy or acidic types of foods. I use your recipes with a Pyrex baking dish or other safer pots.

how much parsley/thyme?

I’ve got to admit, this has become a go-to recipe for a quick and easy meal when we need one!

It is delicious, hot, and if you do it right, it has a nice ratio of veggies to fish and is VERY filling.

I think I’ve made it 5-6 times now and each time I enjoy it! We even substituted Lime for Lemon last time because our Lemon had mysteriously gone missing (my wife was sick and was putting it in her water), and it was still fine!

Thanks for sharing, I appreciate the recipe and look forward to enjoying it many more times.

Full disclosure- I am about to stuff my packets and toss them in the oven!

I am so SO happy to hear that! Thanks for your great feedback, I love the idea of trying lime!

OMG how annoying to have so many people correct a type-o that common sense could easily figure out what you meant.

Made this dish for my hubby about a month ago-he said it was a restaurant quality meal!

What an easy way to make dinner. I used a garlic pepper, sea salt blend and put a little directly on the salmon as well as on top of the asparagus. I would definitely make this again.
