This is one of those dishes. The kind that come to mind when life is crazy and you need to come up with something to fix for dinner but it needs to meet all of your life-is-crazy requirements such as

1) so super easy

2) fast fast fast

3) crowd pleaser (even those picky eaters!)

4) few ingredients

5) on the healthier side

Check, check, check, check, check.

Yep, this is one of those recipes.

We are talking 5 minute prep, about 25 minutes in the oven, and onto the table before you’ve even managed to round up the troops. And it has swiss CHEESE. And BACON.

Talk about buzz words.

P.S. if you are a dressing/sauce/dip person… you need to serve this with some creamy ranch dressing.

Melty Bacon Swiss Chicken

Tender baked chicken topped with crispy bacon and melty ooey gooey swiss cheese! An easy family dinner everyone will love!

Ingredients 

  • 4 boneless skinless chicken breasts , (pounded to ½ inch thickness)
  • 1 ½ teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 8 slices bacon, slightly uncooked, (you don't want them too crispy)
  • 4 slices swiss cheese

Instructions 

  • Preheat oven to 375 and line a baking dish with lightly greased foil.
  • Season chicken breasts with Italian seasoning, garlic powder, and salt and pepper to taste. Place in prepared baking dish. Top with two slices of bacon for each chicken breast, then top each with one slice of swiss cheese.
  • Bake uncovered for 20-25 minutes or until chicken is fully cooked through. Serve immediately and sprinkle with freshly chopped parsley if desired.

Notes

If you area sauce/ranch dressing lover, I HIGHLY recommend serving these melty swiss and bacon chicken with a side of cool and creamy ranch dressing – so amazing!

    20-25 minutes does not cook the bacon all the way through so I recommend cooking it first and putting on fully cooked. Perhaps that is what I was supposed to do but receipe didn’t specify so I assumed baking it would cook it thoroughly

      In the ingredients list it says to use slightly undercooked bacon. That way it gets cooked all the way but doesn’t become too crispy. Hopefully, that helps make this recipe a bit better for you 🙂

    Pretty good. I used chicken tenders and semi-cooked bacon from Costco. I filled the whole pan with the tenders, seasoned them and then put on the bacon and swiss cheese. They turned out great – a little on the dry side, but i think that was because I cooked them a bit too long.

    How long did you cook your bacon before putting it on the chicken and baking the chicken in the oven for the full time? I cooked bacon for the first time recently an it cooked so quickly that it was a little too overcooked and I don’t want to repeat it if I could. Thanks! Looks delicious and can’t wait to try this one!

      Hi V, it depends on if you get “fully cooked” bacon, or raw. If it’s fully cooked, you can cook it in the microwave for 30 seconds or so. If it’s raw, probably 1-2 minutes. It shouldn’t be crispy yet!
