Raspberry Coconut Smoothie {skinny, dairy free, vegan} – Creamy raspberry smoothie made with coconut milk! Bonus: it’s sugar free, dairy free, and vegan!

Did your hometown make a big to-do about asking to dances in high school? My town did. How you asked someone to the dance was a big deal. It was supposed to be creative and clever, and if at all possible, absolutely hilarious. Most of the time the ideas were just so-so clever. Like “Honey-comb your hair you’re going to prom!” on a box of Honeycomb cereal. Or “Can I take you to the dance?!” written in crayon and taped to a can of soda pop. But every now and then you heard about a crazy one. Like when I got asked to homecoming my Junior year. It involved a VW Bug and a coconut. Intrigued? I knew you would be.

The guy I was dating back then was a bit of a show off. A big show off. So even though his asking-surprise shouldn’t have surprised me, it did. How can you not be shocked when you get home from work late one night to find an upside-down Volkswagon Bug (the car. life size.) in your driveway with 16 balloons and a big sign that says “I’d FLIP if you’d go to the dance with me!”.

Seriously? Yes. Seriously. Upside down. In my driveway. A car. Like I said, he was a show off.

But there’s more. After the initial surprise with a catchy phrase, you had to play The Name Game. Somehow, some way, the name of your asker was hidden or encoded and you had to crack the puzzle to find out who asked you. In my case, I really did have to crack it. It was inside of a coconut. A real coconut, brought straight from his trip to Hawaii, still in one piece. Don’t ask me how they got in there (he would never tell me), but inside that coconut I found thirteen candy hearts, each with a letter on it. I already knew who asked me. But still, you have to play The Name Game.

P.S. the coconut? It was involved because I L.O.V.E. coconut. I like it in candy, I like it in drinks and smoothies (hence this recipe), I like it in my curry (oh my goshhhhh), I even like coconut water. Ever tried it? It’s good. If you like coconut. I probably like it even more because it doesn’t make me sick. Yeah, I am lactose intolerant. Sad right?? We lactose intolerant people have medicine we can take to alleviate the effects of dairy but I really enjoy finding or creating a fantastic recipe which calls for coconut milk because, I can eat it/drink it worry free! Annnnnd, this smoothie is healthy. Seriously! No added sugar, and it’s vegan. Bam. Delicious and healthy Raspberry Coconut Smoothie accomplished.

Creamy dreamy raspberry smoothie made with coconut milk! Bonus: it's sugar free, dairy free, and vegan!
Recipe type: Dessert
Serves: 1
  • ½ - 1 cup coconut milk (depending on how thick you like it)
  • 1 medium banana, peeled sliced and frozen
  • 2 teaspoons coconut extract (optional)
  • 1 cup frozen raspberries
  • optional: shredded coconut flakes, sweetener of choice, to taste
  1. Add coconut milk, frozen banana slices and coconut extract to your blender. Pulse 1-2 minutes until smooth. Add frozen raspberries and continue to pulse until smooth.
  2. Pour into your fancy schmancy serving glass, top with a couple of raspberries and a little shredded coconut, and enjoy!

wow, this raspberry coconut smoothie looks gooooood, gonna try it. love your flipped VW bug story. I am also “lactose intolerant”, haven’t been tested but cannot handle milk, can do cheese and ice cream, but no straight milk. thanks for sharing the smoothie recipe, love coconut milk in a curry, haven’t tried it in a smoothie, looking forward to it!

I’m a fellow lactose intolerant, a very sensitive one. My body still reacted to the small amount of lactose left in lactose-free milk and those pills were only partially effective. I was wondering if you’ve tried raw milk? It has been a life changer for me. My body has no reaction to it. For the first time in my life I can have a glass of milk if I like. It’s been such an amazing discovery for me that I try to share it with every lactose intolerant person I come across.

Made this this morning with some tweaks – fresh banana, because I forgot to freeze, ice to thicken up a bit, and kefir milk because I didn’t have enough coconut milk.

Just made this smoothie and it’s amazing. I used 1/2 a cup of the coconut milk but I also used an unfrozen banana and it turned out perfectly. The flavours balance out so nicely and the colour is so vibrant. I’m definitely going to be making this again, thanks for the recipe.

Hi! I just made this smoothie today and I looooove it! But the color of my smoothie did not come out like yours. Mine came out like a light pink shade!! How did you make your smoothie that beautiful pink color? I don’t know what I did wrong!
