Trillionaire Bars – The most delicious chocolate brownie bars with caramel, eggless cookie dough, and multiple chocolate layers!

Oh my word do I have a treat for you. Caution: do not eat if you can’t handle incredibly RICH and decadent desserts! Let’s talk details though, shall we?

These bad boys start off with a rich, dense brownie layer. When I saw Bake Or Break‘s similar bars with a shortbread base, it hit me. Those would be so good with a brownie base.  So I did it. I like my brownies soft, thick and very very fudgey, something you can really sink your teeth into (see last photo) and then melts into chocolaty goodness in your mouth. That is a truly delicious brownie. And that’s exactly what we have as a foundation for these Trillionaire Bars. A perfect brownie base. Then top that brownie base with a layer of soft, chewy caramel. Oh yeah, now we’re talking. But it gets better. Better?? How can it possibly get better??? Well let me tell you.

After that dense fudgey chocolate brownie layer, and the soft and chewy caramel layer (I know you think you’re in heaven already but just you wait) then we’re gonna top that with….cookie dough. Oh baby. Give me a the leftover bowl and beaters from a batch of chocolate chip cookies and I’m one happy gal. This cookie dough is rich and tastes just like it would if you were making your favorite chocolate chip cookies, but without the worry of the raw eggs. So abandon all inhibitions here and just go hog wild on this cookie dough. And if that isn’t enough, you top that cookie dough with a layer of smooth chocolate. I’m in love.

Let’s recap. Fudgey chocolate brownie + soft and chewy caramel + eggless cookie dough + chocolate. What’s not to love here? Not one dang thing I tell ya. These are crazy good and really rich so just be warned right now, you will not have a single one left in your house by the day’s end. Probably should plan on giving some away. Preferably before you try one. Otherwise you will most likely keep them all to yourself. Just take my word for it, I would know.

Trillionaire Bars – The most delicious chocolate brownie bars with caramel, eggless cookie dough, and multiple chocolate layers!

Ingredients 

Brownie Layer

  • ½ cup butter, melted
  • 1 cup sugar
  • 1 cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • ½ teaspoon vanilla
  • 2 eggs
  • ½ cup flour

Caramel Layer

  • 1 cup soft caramels, unwrapped, (I used Kraft caramel bits)
  • 2 tablespoons heavy cream

Cookie Dough Layer

  • ½ cup butter, softened
  • ¼ cup sugar
  • ½ cup brown sugar
  • 2 tablespoons heavy cream
  • ½ teaspoon vanilla
  • ¾ cup flour
  • teaspoon salt
  • ¼ cup mini semi sweet chocolate chips
  • ¼ cup regular size semi sweet chocolate chips
  • ¼ cup old fashioned oats

Chocolate Glaze

  • 1 cup semi sweet chocolate chips
  • 2 tablespoons heavy cream

Instructions 

  • Preheat oven to 325, line an 8×8 inch square pan with foil and spray with cooking spray.

Brownie Layer

  • Cream together butter and sugar in a large bowl. Mix in cocoa powder and salt. Add vanilla and eggs and mix until smooth. Mix in flour until incorporated. Spread brownie batter in prepared pan. Bake 15-20 minutes.

Caramel Layer

  • In a small sauce pan combine caramels and heavy cream and heat over medium high heat, stirring constantly until melted and smooth. Remove from heat and pour caramel mixture over brownie layer. Put the pan in the fridge to chill until cookie dough layer is ready.

Cookie Dough Layer

  • Cream together butter and sugars until light and fluffy. Mix in vanilla and heavy cream. Add flour and salt and mix until incorporated. Stir in chocolate chips and oats. Test the caramel layer by gently pushing a finger across the caramel. When you can do this and the caramel doesn’t much very much, it’s ready. Spread the cookie dough evenly over the caramel layer.

Chocolate Glaze

  • In a microwave safe bowl combine chocolate chips and heavy cream. Microwave on medium for 1-2 minutes, stirring every 20 seconds until chocolate is melted and smooth. Spread chocolate over cookie dough layer. Store in airtight container until ready to serve. Cut into bars and serve!

Store in airtight container in fridge up to 5 days.

    I have a product called Bird’s Custard Powder–I was wondering if I could use that instead of the cookie dough–it is like making Naiamo bars from Canada?

    Definitely would not make these again. We doubled in a 9×13 so as to maximize our output for a 4-layer dessert. It took way longer than 45 mins start to finish. Brownies (doubled) took 29 minutes. I can’t imagine they would take only 15 mins in an 8×8. Anyway, we are both dessert fiends and found that 1c cocoa powder (2c doubled) in the brownies was frankly too much. The best brownie recipe on the planet wants 1c + 1c chips for a 9×13. They are so dark and chocolately that they completely overpower the rest of the layers. It was simultaneously way too sweet (cookie dough and caramel) and way too dark and rich. We’ll be giving 90% of these away.

      I haven’t made this before but when I have wanted to double a recipe and it doesn’t turn out I then just make 2 batches and mix them together to make one. It’s kind of a pain but it works to double the recipe. I’ve done that when making Lefse.

    I made these for my family and my girlfriend’s family. They all absolutely loved them. I skipped the oats in the cookie dough cause we like our cookie dough to be as unhealthy as possible, hahaha. But these turned out great! I’ve been known by both families to have numerous Pinterest fails under my belt, but these were so easy and quick that its impossible to mess up! Such a good recipe, I will keep this recipe forever!

    Only one ingredient missing that would make these total blue ribbon – Cream Cheese! That’s what I thought the center was till I saw the big picture! Thanks for sharing, and please let me know if you find a way to get the cheese incorporated.
