Why This Recipe Works

My two favorite dessert flavors in one bar. I’m a longtime lemon dessert lover and an equally big cream cheese fan, so combining the two makes these into the best lemon bars recipe ever! These cream cheese lemon bars have that bright, citrusy flavor I crave, balanced by a creamy richness that makes them feel extra indulgent without being heavy.

Classic flavor with a creamy twist. This recipe keeps everything people love about lemon bars, but adds cream cheese for a smoother, more luxurious texture. The result is lemon bars with cream cheese that are tangy, silky, and perfectly balanced from the first bite to the last.

A buttery shortbread-style crust that holds up. The crust bakes up tender yet sturdy, giving you true lemon bars with shortbread crust that slice cleanly and hold their shape. Pre-baking the crust ensures every bite has that buttery base without turning soggy under the filling.

Easy, make-ahead, and made for sharing. This is an easy lemon bars recipe that uses mostly pantry and fridge staples, which makes it perfect for casual gatherings and last-minute plans. Since homemade lemon bars need time to chill and set, they’re ideal for making ahead and serving straight from the fridge!

Ingredients:

Ingredients for making cream cheese lemon bars.

For the Crust

  • All-purpose flour: Forms the base of the shortbread crust!
  • Granulated sugar: Lightly sweetens the crust without overpowering the filling.
  • Salt: Balances out the sweetness!
  • Butter: Cold butter creates a tender, crumbly crust texture.

For the Filling

  • Cream cheese: Adds richness and a smooth, creamy texture. Make sure it is softened to room temperature!
  • Granulated sugar: Sweetens the filling while balancing the lemon.
  • Flour: Helps the filling set without becoming dense.
  • Fresh lemon juice: Provides bright, tangy lemon flavor. I recommend using fresh lemon juice as opposed to bottled lemon juice here.
  • Powdered sugar: Adds sweetness and a silky finish to the filling.
  • Eggs: Give structure and a custardy texture.
  • Vanilla extract: Adds a depth of flavor!

Variations & Substitutions

  • Lemon Juice: Swap lemon juice for lime or Meyer lemon juice.
  • Zest: Add lemon zest to the filling for even more lemon flavor.
  • Gluten Free: Use a gluten-free all-purpose flour blend for a gluten-free version.

Here’s How You Make It

Did I mention these lemon bars are so easy to make?

  1. First thing you need to do is preheat the oven to 350 degrees and line a 9 x13-inch pan with foil or parchment paper. Leave plenty of overhang around the edges so that you can lift the bars out of the pan before cutting.
  2. Make the Crust: Prepare the crust by combining flour, sugars, salt, and butter cubes in a food processor or blender. Cover and pulse until fine crumbs form. (You can also do this with a pastry cutter, fork, or with your fingers in a large bowl.)
Step 2 in prepping cream cheese lemon bars.
  1. Bake Crust: Press crust into prepared pan and bake for 10 minutes while you prepare the filling.
  2. Make the Cream Cheese Filling: Prepare the filling by combining cream cheese and sugar in a large bowl. Cream together until smooth. Mix in flour, powdered sugar, lemon juice, eggs, and vanilla until completely incorporated.
Step 4 for prepping cream cheese lemon bars.
  1. Bake Again: Pour filling over crust and return to oven for 30 minutes.
  2. Cool & Enjoy: Allow to cool for about 20 minutes, then cover and transfer chill in the fridge 4 hours or overnight. Lift the foil edges to remove the bars from the pan, slice into squares, sprinkle with additional powdered sugar, and serve.

Expert Tips

  • Use room temperature cream cheese. Softened cream cheese blends smoothly into the filling and prevents lumps. Cold cream cheese can leave pockets that won’t fully mix in.
  • Don’t skip pre-baking the crust. Baking the crust first ensures it stays firm and buttery under the creamy filling. This step prevents a soggy bottom!
  • Fresh lemon juice matters. Bottled juice won’t give you the same bright, fresh flavor. Fresh-squeezed lemon juice really makes these bars shine.
  • Chill before slicing. Refrigerating the bars allows the filling to fully set. You’ll get cleaner slices and a better texture overall.

FAQs

Do lemon bars need to be refrigerated?

Yes, because of the cream cheese and eggs, these bars should be stored in the refrigerator. Keep them covered, and they’ll stay fresh for up to 4–5 days.

Can I freeze cream cheese lemon bars?

Yes, they freeze well. Slice them, wrap tightly, and freeze for up to 2 months; thaw overnight in the fridge before serving.

What does lemon juice do to cream cheese?

Lemon juice adds brightness and acidity to cream cheese, balancing its richness and enhancing the overall flavor. It also slightly softens the texture, helping create a smoother, more creamy filling in desserts like lemon bars.

Notes

Flavor tip: add an extra 1 teaspoon of fresh lemon zest for even more lemon flavor!
Altitude adjustments: if you find that after the instructed baking time your bars have not set, simply continue to bake in 5-10 minute increments until center has set. If edges begin to brown too much, tent with foil and continue baking.

Wish I’d read the comments before I started. Is there supposed to be cornstarch or some thing in it?

    1. Tiffany says:

No, no cornstarch. The recipe is correct as written. To help guarantee a smooth, creamy filling you’ll need to use fully softened cream cheese. This is huge. If the cream cheese is even slightly cool, it won’t blend smoothly and you can end up with tiny lumps or a weird texture. I’d let it sit out 1–2 hours. You also want to mix the cream cheese and sugar first until completely smooth before adding eggs or lemon juice. Don’t rush this step. You also want to add the eggs last and mix gently. Over mixing eggs can create, too much air, puffing/cracking, and/or slightly eggy texture. Mix just until combined. Also, be careful not to over-bake them. Pull them out when the edges are set, and the center still has a slight jiggle. If you bake until fully firm in the oven, the filling can turn dense, rubbery, or chalky after cooling. Chill completely before slicing. They continue setting as they cool. If you really want cornstarch, however, you can replace part of the flour with cornstarch. Use 2 tbsp flour and 2 tbsp cornstabrch.

Do you spray the parchment paper with cooking spray ?

    1. Tiffany says:

No, parchment paper is nonstick but you can spray it if you really want to!

Super disappointed. I was so excited when I saw this recipe. It was a puddle in the middle and never really set after an hour of baking and 3 hours of cooling. 🙁

  4. Shirley says:

    Hello.

Im just wondering, should I let the crust cool before I add the filling to it?
    Thank you!

    1. Tiffany says:

No, you don’t let the crust cool. You pour the filling on the crust immediately after the crust comes out of the oven 🙂

  5. Tara D says:

    Hello,

Just wondering do they freeze well?

    1. Tiffany says:

You can easily freeze cream cheese so long as it’s made with full-fat cream cheese. What I like to do is either freeze the whole thing by wrapping the cream cheese lemon bars — pan and all — in plastic wrap then add foil to the top of that to make sure the bars don’t get freezer burn. You can keep them in the freezer for about a month.

Or, you can freeze individual slices of the lemon bars with a shortbread crust. Cut them as instructed, then put the slices on a baking sheet lined with parchment or wax paper. Put the tray into the freezer to freeze the lemon bars individually. This will take about 6 hours or overnight. When they are frozen, you can take them off the tray and wrap them individually in plastic wrap then put them all in an airtight, freezer-safe container. This way, you can take one out at a time and not eat them all at once.

To thaw, put the pan in the fridge overnight and then cut them as directed. Eat within two days (keeping them in the fridge in between). Once they’re thawed, do not refreeze them.

The crust instructions say to add sugars (plural) but only granulated sugar is listed in the ingredients. Should there be another sugar as well? I’ve made them twice as listed and there amazing!

    1. Tiffany says:

It was a typo. Sorry about that! It’s fixed now. Thank you for bringing that to my attention!

Followed the recipe as written. The center did not set even though i baked a bit longer and left in the fridge for hours. Disappointed, however i must say, the flavour was delicious.

Nutrition facts are usually presented per serving. That would be 1000+ mg divided by how many bars (24-32). Perhaps that came to mind eventually. I replaced sugar with date caramel and added about 1tbs extra flour. They set up well and were yummy.

How can the Cholesterol be so low with so many eggs (6). One egg is over 300 milligrams of Cholesterol.

Is it supposed to be more of a pudding? Consistency.
Or is it supposed to be like the box kind? Where it? is more stiff

        1. Tiffany says:

          A bit in-between. More cheesecakey 🙂
