It’s time to share my latest foil pack obsession with you and let me tell you right now, it is GOOD. So much flavor crammed into these individual serving foil packets it’s crazy. And that flavor is coming from a handful of tasty ingredients like crunchy bell peppers, tender zucchini, fresh-squeezed lemon, sausage, shrimp, most of all, GrillMates Zesty Herb Marinade.

These foil packs are exactly what your holiday celebrations need, and I’m just saying, you’re gonna want to make them again and again all Summer long. Shrimp Sausage and Veggie Foil Packs

Ingredients 

  • ½ pound andouille sausage
  • 1 pound medium shrimp, peeled and de-veined
  • 1 medium zucchini, sliced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • cup olive oil
  • 1 packet GrillMates Zesty Herb Marinade
  • 2 tablespoons water
  • juice of ½ lemon
  • chopped parsley, for garnish

Instructions 

  • In a large bowl combine oil, marinade, water, and lemon juice and stir to combine. Add sausage, shrimp, and veggies to the bowl and stir to combine.
  • Divide shrimp and sausage mixture between four pieces of 12×12 inch foil. Warp tightly, pinching edges to seal packet. 
  • Grill over medium-high heat for 5-10 minutes on each side until veggies are tender. Garnish with chopped parsley and fresh lemon juice if desired and serve. 

Notes

Make ahead: these can be made ahead of time, stored in the fridge or a cooler, and cooked when ready to serve. Great for camping!

    cOULD I MAKE THESE UP AND THEn freeze them?

      Thawed definitely works best! I suppose you could make ahead and freeze, but be sure to thaw before you cook them!

    Can you use frozen precooked shrimp?

    Im new to cooking with shrimp and just found some in the freezer.

      I definitely recommend thawing your shrimp first if frozen is what you have!

      Hi Ruby! I would recommend at 400 degrees for about 20 minutes, until the veggies are cooked through all the way! I hope that you love it!

    O make foil packed dinners as well, however, I like all the variations you came up with. Mostly I would use onion, carrots, POTatoes, zucchini, and chicken legs or thighs in oven.

    The picture shows lemon slIces in it, but they aren’t in the recipe. Is there an ingredient missing or did you change the recipe? Making it tonight – looking forward to it like all of your recipes!

      Hi Rich- In step 1 you use lemon juice! Step 3 has an optional topping of more lemon juice- I added more then and just threw in the lemons with it! You can do whatever your preference is. Thanks for asking for clarification!
